Why Comfort Food?
I’m a sucker for anything my grandma used to make. No, it doesn’t fit into any of the current “trendy” eating plans. But I work hard every day, and food is one of my few pleasures.
Coming home from a hard day of manual labor to find the wonderful smell of a pot of homecooked food waiting for me just makes me happy. My beef stroganoff requires a little more cooking time once I get home, but it’s easy to toss in the cream cheese to melt while I jump in the shower. Then I just stir in the sour cream, the cooked noodles and eat.
Are Slow Cooker Meals for Me?
Everyone should own a Crockpot, in my opinion. This wonderful little tool is a staple in my kitchen gadget arsenal. I use it for so many things to feed my family. Having to work full-time, throwing all of my ingredients in before I walk out the door to cook while I’m away is priceless to me.
I’ve heard people have concerns about using the slow cooker while away from the home. Fear of fire can be a concern, but proper care and storage of your Crockpot can greatly reduce the risk. There are only around 100 cases of a slow cooker causing a house fire. I may not be the gambling kind of gal, but those odds are worth the risk to me.

Beef Stroganoff Prep
Because most days, I do not want to have to spend a lot of time prepping dinner, I do most of the chopping for our Meal Plan on the weekend. Having everything already prepped means that on any given day, it’s simply a dump-and-go situation to get dinner going.
I typically grocery shop on Saturday. And then do all the prep cook-type chopping and cutting on Sunday. In the case of this beef stroganoff, I had already cut the meat into 1″ chunks and had all of my onions diced and frozen. So on cooking day, I simply drop the beef, onions, mushrooms, soup, and broth into the slow cooker, stir and go.

Easy Slow Cooker Beef Stroganoff
Equipment
- 8-quart Crockpot
Ingredients
- 1 1/2 lb beef roast cut into 1" chunks
- 1 small onion chopped
- 1 can mushrooms stems and peices, drained
- 1 can Golden Mushroom condensed soup
- 1 can French Onion condensed soup
- 1 cup beef broth
- 8 oz cream cheese softened
- 1 cup sour cream
- 1 pkg wide egg noodles cooked according to package directions
Instructions
- Stir together soups and broth in your Crockpot.
- Add in beef, onions, and mushrooms. Stir to combine.
- Cook on LOW 8-10 hours.
- After cooked through, stir in cream cheese. Allow to melt fully and incorporate into broth mixture.
- Cook egg noodles according to package directions.
- Stir sour cream into the beef mixture.
- Stir in cooked egg noodles.
- Add salt and pepper to taste. Enjoy
