St. Patrick's Day Cracker Jack
Need a fun snack or treat for a St. Patrick's Day party? Whip up a batch of my green St. Patrick's Day Cracker Jack to share.
- 2 cups sugar
- 4 tbsp light Karo syrup
- 1 cup water
- 4 tbsp butter
- 1 tsp vinegar
- 1/2 tsp baking soda
- 1 tsp vanilla
- 2 tsp green food coloring
- 4 cups air-popped popcorn
Place sugar, Karo, water and butter into a saucepan. Stir in vinegar.
Bring to a boil over medium heat.
Turn heat to low and boil until a candy thermometer reads 240F.
Remove from heat.
Stir in baking soda dissolved in vanilla and food coloring.
Pour over popcorn in a large bowl. Mix gently to coat.
Spread candy coated popcorn on a large cookie sheet lined with parchment. Allow to cool completely.
Store in an airtight container for up to 1 week.
