Modified Mac N Cheese
I’m never going to claim that homemade isn’t the best option for our food. But some nights need a quick solution. (Or, like my sister, homemade is just beyond the realm of their skill set.) Having that blue box of mac n cheese in your pantry is just a staple when you have kids or are eating on a budget.
Sometimes plain old mac n cheese just gets boring, tho.
And honesty, while most kids would eat mac n cheese as a meal in and of itself, adding in a protein source is healthier and more filling.
Taco Mac Tuesday
Using themes in meal planning can help you keep things switched up. I live by meal planning and freezer cooking, but sometimes it can seem like we keep eating the same things over and over. This is especially true if you have picky eaters to contend with.
Using “Taco Tuesday” as a game plan in your meal planning sessions can help make sure that everyone gets something they like AND that you have a good basis on how to make sure that everyone gets fed, no matter how hectic life gets.
Taco Mac- The Inception
I remember trying to plan a dinner for my step-kids one evening. One of them will eat absolutely anything. The other is one of the pickiest eaters I have ever met in my life. Knowing this, and having limited options on-hand, I decided to throw caution to the wind and just go for it.
We had the blue box in the cupboard… we had ground beef in the freezer… and I had some home-canned salsa. What could go wrong?
And because it’s all simple things to make and do, even my husband can make this meal in a pinch. (Yes, he likes to cook. And he’s not awful at it. I do kind of take over though. LOL)
While I am not a fan of convenience foods, I did learn (via a teenager no less) that the blue box has removed the chemical dyes from its ingredient list. Every little bit helps, and honestly if I’m in a hurry I forgive myself for doing things the easy way.

Taco Mac Skillet Meal
Ingredients
- 2 boxes macaroni and cheese prepared according to package directions
- 1 jar prepared salsa
- 1 lb. ground beef browned
Instructions
- Prepare boxed macaroni and cheese according to the package directions.
- While macaroni is cooking, brown ground beef in a large skillet. Drain.
- Once macaroni and cheese is prepared, add to skillet with ground beef.
- Mix in the jar of salsa.
- Serve with additional shredded cheese and/or sour cream, as desired.
